6 Vegetables to Plant Now for a Fall Harvest

August 27, 2021 By Stephanie Reyes 2 Comments

green leafy vegetables - fall harvest

If you want an abundant fall garden, start planting your crops midsummer. The key is to plant fast-growing crops while the soil is still warm so that the seeds germinate quicker. Here are six vegetables that you can grow now for a fall harvest:

  • Cucumber – Cucumbers seeds sprout faster in warm temperatures, and you can harvest them in about 50 days. Just drop three seeds in groups every twelve to fourteen inches and provide a trellis to support your cucumbers.
  • Green beans – If you plant green beans during the spring, they may begin to fade mid to late July. Try planting green beans midsummer so that you can harvest them when fall settles in. It is best to plant bush-type green beans if you want them to produce faster since they mature after 60 days.
  • Green leafy vegetables – Green leafy vegetables like kale and cabbage germinate and mature quickly in midsummer. Some varieties grow 25 to 30 days after you plant them.
  • Green onion – Green onions are fast-growing crops that mature best when planted midsummer. They should be ready for harvest after three to four weeks. Make sure to pull out the whole plant.
  • Radish – Radishes generally take between 28 to 72 days to grow. Planting them from August to September gets you a good supply of radishes before it starts to freeze.
  • Peas – Just like green beans, bush-type peas mature much faster than the climbing varieties. You can harvest your peas 60 days after planting.
